I am certainly no expert, but have done a tremendous amount of research in the 10 years since my husband was diagnosed T2. Also, my son was a vegetarian for several years and I have known several, of different types. You didn't say which type your wife is.
It is very difficult for a vegetarian to also be low carb. There are only 3 nutritional elements, protein (meats, eggs, cheese, etc.), fats and carbohydrates. If you cut out the proteins and fats, you are left with the carbs. No processed foods and no fried foods is great, but does not equate to low carb, it's just not the same thing.
Most vegetarians I have known love their fruit. Lots of sugars and carbs there. Also, most vegetarians end up eating a lot of pastas and starchy veg. Lots of sugars and carbs there too. Until they are faced with diabetes, most people (I certainly didn't!) don't realize that ALL these foods turn to sugar in the body.
On the other hand, perhaps your wife just has some kind of genetic tendency. Both my husband's parents were also T2 diabetics, although his surfaced about 10 years earlier than either of theirs.

My wife was recently diagnosed borderline T2 diabetic and is awaiting a glucose tolerance test. As for diet, she is vegetarian, has a very low carb diet, no processed products, no fried foods and eats a very frugal amount. Why is she diabetic?

Arrghhhh.....tried it from the Nutrition and Metabolism Society's homepage. Still didn't work on my old computer ! So I tried it on my latest iMac, tried it in Safari and Firefox and it still didn't work ! I reckon it doesn't work with Macs :-( Lucky I eat low carb for my diabetes :-)

No, the link still doesn't work, I get the same wmafilegenerate.asf document of 4kb downloaded ! Could be that my Mac is too old, it's six years ? It will never die lol But I'm running the latest operating system. I'm very curious as to why you stuck a Mac sticker over your Dell logo ?
Anyway, is the clip about low carbing ? If so that's what I do, low carb Paleo, ie no grains, dairy, beans, pulses or starchy vegetable, but also hardly ever any fruit as that raises my blood glucose too much as well. I eat plenty of fish, meat, eggs, non-starchy veggies, nuts, seeds, and oils....and a glass of red wine each evening. I love this way of eating and my diabetes is very well controlled because of it :-)

My husband is a T2, diagnosed in 1999. We have been low carb since 2001. He says low carb saved his life. He no longer has to take any meds, hasn't since about 2002.
Yeah, you do have to give up sticky buns and a lot of other junk foods. We feel it is worth the trade off - little or no junk food in exchange for no meds and very good health. No contest, really!!

The link didn't work but downloaded a file called wmafilegenerate.asf Now I know you have a Mac ' cos I saw it in your photo a few blogs back, and so do I, so can you send a Mac compatible link please as I have type 2 diabetes - although I am not typical as I am thin and not insulin resistant.
